Coming home party... need menu ideas!

My parents want to have a sort of "coming home" party with my family, DH's family and some close friends... to celebrate us moving back to NY.

Help me plan a menu!

Think backyard pool party/BBQ.... would like ideas for appetizers, main dishes, sides/salads and desserts. I'm thinking an ice cream bar type thing could be fun for dessert! Would love help with ideas for that too Chat Icon

When I think of NY/LI - I think of pizza and bagels - not the best for bbq's.

How awesome is this? I love the 'long island' theme.

I'm doing a BBQ next weekend for Robbie's birthday and I'm having some challenges making it 'special' - so I don't think I'll be much help but so far we have:

Garlic Lemon Shrimp Kebabs
Marinated Steak
Marinated Portobellos
Sausage and Peppers

Grilled Veggies
Corn on the Cob
House Salad
Baked Taters (sweet and regular with a toppings bar) - this is what I'm most excited about.

Fruit Salad
Grilled Fruit
Birthday Cake

Root beer floats at Robbie's request.

I'll probably have some dogs and burgers too.

I'm having a BBQ party this weekend and am making:

crudite platter w/dip
chips/dip

green salad
grilled skirt steak
little neck clams on the BBQ w/ drawn garlic butter
grilled shrimp skewers

baked potato bar (like to do these b/c they are low maintenance - can put in oven for hours and they are delish)

sooo funny about the baked potato bar... foodies think alike!!!!

It totally doesn't need to be LI themed at all. We've been living in San Diego for almost 3 years and are moving back to NY. We'll have plenty of time to get in all the pizza and bagels that we can eat, but it's a summer party (early August) so we want it to be more summery BBQy Chat Icon

I have an awesome recipe for Filipino pork skewers if your interested, everyone raves about them.

You can use the marinade to do skewers or ribs, its a little sweet but takes 24 hours to marinate.

If you want it let me know and ill type it all out.

Filipino Pork

This recipe is based on approximately 1-1.5 lb of boneless pork ribs (or ½ costco sized container)

They really go quickly so you may want to double the recipe (I usually do), in which case you just double the ingredients.

You can do either boneless pork ribs and skew them, or pork spareribs, this is based on the boneless version

1-1.5 lbs boneless pork ribs, sliced on the thin side
¼ cup soy sauce (I use lower sodium)
½ cup brown sugar
½ cup vinegar
1 head of garlic, crushed (yes a whole head)
1 small onion, cut very small (minced)
1 can of sprite (oh yeah sprite)
3 lemons, sliced into like 3rds
Some hot sauce-depending on your preference, I use about 1 tbls or I omit, you can omit it if you wish
¼ cup banana ketchup (very hard to find-Amazon or Asian store) you can omit it, will still taste very good
Skewers

Combine in big bowl -vinegar, soy sauce, sprite, hot sauce (if you want it) and banana ketchup (if you have it)

Add brown sugar, garlic, onion, little salt and mix well.

Slice your boneless ribs thin, if you haven’t already done so

Next, put the ribs in a big Ziploc bag (depending on quantity, you may need to split it into 2 ziploc bags)

Then add marinade into bag(s)

Add your lemon wedges and seal tightly (you may want to double bag to prevent spillage)

Put in fridge and marinate for 18-24 hours, I usually take bags out a couple of times and shake em up, turn em around to make sure marinade is coating evenly

After they have marinated, skew them (may sure you soak your skewers in water so they don’t burn)

Now you can either take the marinade (minus the lemon wedges) and boil it until its reduced 50%, and use this as a glaze as you are BBQing, or you can skip that step, although it really makes a nice glaze

BBQ the skewers make sure to cook through, but not overcook! About 5-7 minutes on one side, then glaze (if you choose) then about 5 minutes on other side, reglaze, then another like 2 minutes, should do it. Depends on how thick they are etc.

You could serve with a spiced vinegar dipping sauce, or just leave as is, I usually leave as is bc they are great without it.

hmm i am still thinking. i am just going to throw out ideas

a caprese salad with a drizzle of balsamic..

maybe a corn and black bean salad/salsa

sword fish kabobs? that may be too Chat Icon
maybe chicken kabobs with peppers and onions in between the chicken cubes
you can also do beef kabobs..

hmm still thinking..
