Christmas Eve Menu - Need 1-2 veggie recipes!
I'm hosting Christmas Eve this year for the second time. We don't necessarily do courses, we just have apps out on a table for people to pick at and then when it is time to eat, everything goes out on the table together. It may seem like a lot of different things, but we are Italian and do the traditional 7 fish. lol I am looking to add 1-2 more veggie dishes and that's where I need some help! What do you think would go well with this menu? Any recipes would be greatly appreciated!
APPETIZERS
Shrimp Cocktail
Cold Seafood Salad
Bruschetta
Antipasto Skewers – Cheese/Olives/etc.
MAIN COURSE
Fried Calamari with Lemon and Marinara
Baked Clams
Crab Cakes with Tartar Sauce
Scallops Wrapped in Bacon
Shrimp Scampi over Linguini
Bacala (Mom - I won't touch this!)
Stuffed Green/Red Bell Peppers
Green Salad
DESSERT
Cookies
Cake Balls
Red Velvet Cheesecake Cake

My mother makes these fried cauliflower patties...oh my Lord..they are amazing!
Also, how about stuffed mushrooms or string beans? roasted potatoes?

What about roasted broccoli and cauliflower? It is easy and goes well with your menu.
