An FM exchange with a friend inspired me...share your daily meals!

Let's share our weeknight dinner ideas! A typical rundown of a week's worth would be great!

You'll have more than me of course...I need to learn from the pros.

I love Kate's Pasta (a recipe from my school cookbook)....soooo easy and sooo yummy

12 oz. pasta (any kind)
12 oz. chicken apple sausage (about 4 links)
One 14 oz bag of frozen broccoli florets
8 oz. Jar of sundried tomatoes
1/4 c. Parmesan cheese

Cook pasta according to directions. Cut up sausage into bite size pieces and cook in skillet. Combine cooked pasta and sausage in large bowl. Cook frozen broccoli in microwave and add to large bowl. Add jar of sun-dried tomatoes and its oil into bow; stir to mix ingredients. Add Parmesan cheese.

Other days I make veggie burgers and veggie soup
Penne ala Vodka
Chicken fajitas or tacos (with the El Paso kits)

Desperately need more ideas! Healthy would be great too!!!

I stock upon the London Broils when S&S has them for $1.99lb, marinate them with sesame ginger, grill/broil and serve with homemade sweet potato fries.

In the ethnic aisle, there is a jar of Tikka paste, mix it with some sour cream so that the heat is to your liking. Cube chick breast and mix it with the sauce. Bake at 350 for about 1/2 hour. Serve with couscous (the food so nice, they named it 2x)

Chic breast marinated in either salad dressing or lawry's herb & garlic, grilled. Cut up, serve over farfalle with peppercorn ranch dressing, cherry tomatoes and crumbled goat cheese. Serve at room temperature. Great left over for lunch.

OR same chick made into ceasar salad wraps.

Get the panko bread crumbs (Ian's) there is a recipe on it for chick tenders (mustard and egg, coated in bread crumbs) SOOO good, especially made buffalo style and served over salad.

ETA: Chicken scampi, chicken chunks, garlic, olive oil and bread crumbs. Bake at 350, serve over angel hair pasta.

well, it changes each week but in the beginning of the week i'll go food shopping and map out what i'm going to make. the recipes are too long to actually write out each one and some i do by memory but i'll just write out what i make and if anyone really wants to know more about it they can FM me! i'll be happy to share details. for this week (i just did the menu on saturday)...

sunday: chicken cutlets, marinated in teriyaki w/ sauteed mushrooms and cheddar cheese. side: carrots and corn.

monday: chicken fajitas (i love this recipe!!) with shredded lettuce, cheese, guac & sour cream. side: brown spanish rice.

tuesday: roasting chicken (lemon and herb seasoning) with sweet potatoes and caesar salad.

wednesday: italian wedding soup with oyster crackers (DH loves them w/ soup) and a fresh cold cut grilled panini - pairs well w/ the soup.

thursday: baked ziti (family recipe!) with garlic bread and the spinach leaf salad (it is our fave - we eat it a lot). i make it with granny smith apple slices, walnuts, mozzarella cheese and a vinegarette dressing!

friday: toss-up. we usually either order in, eat out or sometimes, for fun, i'll make a "breakfast" dinner -- so, i'll make blueberry pancakes from scratch or something fun like that.

then, i do the next week after that.

i buy food for one week - then, go shopping again for the next week. all of non-food items get done every other week. Chat Icon

I do a weekly menu, write out the grocery list and shop on Sunday, here is our menu, 2 adults and 2 kids:

Sunday: Chicken breasts over broccoli and rice casserole, peas, and fresh peaches.

Monday: Tator Tot Casserole (a request for a birthday), creamed corn, strawberry poppy seed spinach salad

Tuesday: Crockpot Beef Stew served over biscuits

Wednesday: Breakfast for dinner! Egg Casserole and biscuits with sausage gravy

Thursday: Meatloaf, twice baked potatoes, and sugar snap peas with carrots

Friday: Taco soup with warm tortillas.

Saturday: Probably pizza or mexican out some place

Today: Spinach lasagna

Monday: crockpot Pepper steak with brown rice

Tuesday: Turkey meatloaf, mashed potatoes, broccoli

Wednesday: Homemade sauce and turkey sausages served over spaghetti squash, salad

Thursday: Salmon, Roasted garlicky butternut squash, salad with gorgonzola and craisins

Friday: Probably leftovers from one of the nights

Saturday: take-out or go out to eat

This week's menu:

last night: DH made stir fry since I was dying with a migraine – he’s soo good – he even cleaned up!

Monday: Turkey burgers with spinach and feta / pasta salad

Tuesday: chicken wings on the bbq – but my mom is coming over during the day to help me organize and she just told me she is making eggplant parm for us

Wednesday: either chix wings or eggplant parm – which ever we don’t eat Wednesday night

Thursday: pot roast or something like that in the crock pot – not sure what it is!! lol

Friday: take out - Chinese

Saturday: usually eat out..

Each week we vary based on what's on sale...

Tonight: DH is making dinner--he asked for chicken, alfredo sauce, artichoke hearts, italian cheese mix....so I'm guessing he's going to do some kind of cheesy chicken bake with pasta Chat Icon

Tomorrow: I make dinner, I'm doing Turkey Tacos--I do the ground turkey with taco seasoning, make up some fresh guacamole (1 avocado worth is perfect--just add some lime juice, garlic, diced tomato, a dash of tabasco), serve with large soft tortillas, shredded cheese, sour cream...

Wednesday: DH is making dinner again, London Broil on the grill, grilled zucchini, baked potatoes

Thursday: My night again, I think I will do a pesto marinade & sauce for some chicken, veggies and pasta

Friday: We'll probably do marinated chicken or pork chops, a veggie, and maybe rice or roasted potatoes...something simple.

wednesday- minute steak and onion
sandwiches

thursday- chicken parm( using left over homemade sauce)

I don't cook much b/c of our schedules.

Monday: Dh has class til 7:30 so I will either cook something so we can eat when he gets home or he will eat on his own and I eat whatever's available.

Tuesday: DH has training at the FDNY academy. I will be eating a salad and a low-fat frozen burrito.

Wednesday: I have dinner with my mom, we usually go out. DH has school til 8 and will fend for himself.

Thursday- I will cook!! Chat Icon This week I'll probably do breakfast for dinner- bacon, eggs and toast

Friday- I usually baby sit for my cousins so we order in chinese at my Aunts house.

Saturday- we normally eat out

Sunday- I cook again- something more substantial.

There are weeks when the schedule changes up. I make the following depending on the schedule and whether or not DH decides to be on a low carb diet that week Chat Icon :

-Turkey Burgers with homemade sweet potato fried

-Turkey Meatloaf with sauteed garlic spinach

-pasta and sauce (I use jarred-there's no italian in my blood Chat Icon )

-sausage and peppers

-pepper steak

-waikiki meatballs (YUM!)

-Chili- either turkey or beef

-roasted chicken with vegetables and salad (possibly mashed potatoes)

-omelets

-something in the crockpot (I like to try new recipes)

-Rachel Ray's Turkey Shepard's Pie (topped with sweet potatoes)

-chicken cutlets sauteed, breaded and fried or baked

-any new recipe I find that looks interesting

This week we did:

Saturday: Chicken Cutlets, corn on the cob and salad

Sunday: Ordered Chinese because it was raining and we were supposed to BBQ

Monday: Veal Chops and Shell Steak

Tuesday: Baked Chicken with an alfredo pasta side dish

Wednesday: Pancakes

Thursday: Ordering because I have to clean my house for my Passion Party on Friday

I made Beef stew, whole wheat noodles, and we had italian bread too

Monday: Left over stew.

Tuesday: Went to my sisters for dinner.

Wednesday: Roasted chicken, with mashed potatoes, and green bean salad

Friday: Take out

Saturday: Go out for dinner.

We usually stick to poultry during the week but I like to mix it up

Sunday: Made beef stroganoff in the crockpot with whole wheat noodles

Monday: black bean tostadas with mushrooms

Tuesday: Turkey meatballs with whole grain rice & broccoli

Wednesday: Lemon Buttery Shrimp with Whole Wheat pasta

Thursday: Leftovers

Friday: Order our dinner

Saturday: Dinner with IL's

It varies from week to week, but here is this weeks menu:

Sunday: Homemade French Onion Soup

Monday: Chicken breasts with mushroom stuffing and steamed veggies

Tuesday: Meatloaf and salad

Wednesday: Grilled chicken sausages and salad

Thursday: Baked Flounder with Steamed Veggies

Friday: Leftover French Onion Soup

Saturday: Not sure.

Week of October 5th, we have a busy week so were doing a lot of quick stuff:

Sunday: Taco's, Black Beans, and Rice

Monday: Crockpot Beef Stroganoff over egg noodles, sugar snap peas

Tuesday: Pork Tenderloin, Au- Gratin Potatoes, Corn

Wednesday: Cheesesteak sandwiches, sweet potato fries, fruit salad

Thursday: Ham Steaks, Mac and Cheese, Broccoli

Friday: Salad and pizza

Saturday: Date night with DH, so we will grab something out.

Chicken Enchiladas

Steamed flounder with sauteed spinach and rice pilaf

Marinated London Broil with baked potatoes, garlic broccoli, and sliced tomatoes.

Buttermilk Chicken tenders with Cucumber salad and potato salad.

Pasta with chick peas and green salad & garlic bread.

Pepper steak
