40th Birthday day trip or overnight ideas

DH will be 40 the end of next month. We just had a big adult party at the house to celebrate with friends (kids had a sleepover at grandparents) this past weekend.
I want to do something with the family the weekend before his birthday to make it special and have the kids involved. They are off a couple of days for the Jewish holidays in September. We do celebrate but want to do something Friday or Friday to Saturday.

Any fun ideas? Day trip?
Go to the city for the day?
Down the shore?
Philadelphia?

We live in central jersey.

Want to do something fun for all of us. My boys are 8 and 6 and really good with trips and visiting places.
He's into beer, breweries, outdoor stuff, etc
No museums or shows. We've done that a lot and just not something he'd pick for himself.

ps. this post is making me homesick. i miss living in central jersey.

i used to live in hamilton square, just outside of the princeton/trenton area.

What about Boston? You could visit Sam Adams and Harpooon Brewery. Could walk the freedom trail, go on a duck tour, there is also the aquarium.
