Not really. You just have to cook it a really long time if I recall.

I had this recipe for a great tomato, spinach and sauasage risotto. To die for.

I'll see if I can find it

Nah, it does take some time and constant attention to get it right.
Don't rush it, and the end results will be delicious.
Oh, and make sure the stock you add to the rice is hot.

It was this:

Tomato and Sausage Risotto

And OMG it was fabulous!

We had never made risotto before and we did fine.
The only thing- I feel like i remember that the amount of liquid it was calling for was too much and left it watery and never fully absorbed so we just used less.
Go slowly adding the liquid and go by eye

If you don't want to make it from scratch the first time, Trader Joes has an awesome mushroom one, you just add chicken stock. It's by the pastas.

It's super easy, just a little time consuming. I usually make it with a little wine and then drink the rest of the bottle while I'm stirring the risotto! Chat Icon
