What is your diet...like what's a typical day for you with breakfast, lunch, dinner and snacks
I am looking into it but only find stuff I can't eat...

Aside from grains, soy sauce and beer you can eat almost anything--these are my go to foods for each meal--I do not eat them
All at the same time--
Breakfast:
omlet with veggies and cheese
Frittata
Fage yogurt
Gluten free rolled oats or steel cut oats (I like Bob's red mill brand best)
French toast made with Udi's whole grain gluten free bread
Fruit
Veggies
Lunch:
Gilled chicken or pork with salad
Quinoa with black beans and veggies
Turkey chili with beans and rice
Indian food
Thai--no soy sauce
Sushi with Tamari
Buckwheat pilaf (buckwheat, onions, mushrooms and veggies)
Frittata

Dinner:
Grilled pork, chicken, fish or shrimp
Veggies
Sweet potatoes
White potatoes
Quinoa
Rice pasta(trader Joe's brand rice pasta is my favorite-rinse well with hot water before adding sauce)
Basmati rice
Taco on lettuce wraps (bib lettuce)
Fajita bowl
Snacks:

Carrots and cucumbers with hummus
Corn chips and guacamole
Popcorn
Fruit
Kind bars
Dried fruit
Almonds
Tate's or Trader Joe's gluten free chocolate chip cookies

Dh is completely gluten free.

Breakfast is eggs, chex, or yogurt.

Lunch is salad with grilled chicken. I make a few days worth and layer in mason jars to keep them fresh for a while. Some days he does ham and cheese rolled up.

Snacks are nut thin crackers with hummus, granola bars (kind, luna, think thin, oskri brand), Tostitos, almonds, fruit, popcorn, chex.

Dinner is all kinds of things. Burgers or hot dogs without bums, Italian sausage, meatloaf with gf oats, Barilla gf pasta, homemade gf pizza, tacos, chicken, pork chops, steak, etc.

For us the hardest thing is eating out since dh is susceptible to cross contamination. There is a fb group for gf on long island that had been helpful though.
