I love all types of roasted vegetables. Chop up veggies (butternut squash, cauliflower, potatoes) toss in EVOO and salt and pepper. Roast for 20 mins on a cookie sheet at 400 degrees.

I love Butter Paneer... its an Indian dish..  and its exactly what it sounds like.. Paneer (is a type of cheese) in a butter sauce..

The cheesy green bean casserole from Kraft is fantastic. OMG so good. You put a box of Stove Top on top of it... So tasty!
2 pkg. (16 oz. each) frozen French-cut green beans, thawed, drained
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes (I use cheddar cheese - I hate velveeta)
1-1/2 cups hot water
1/4 cup butter
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
HEAT oven to 350ºF.
COMBINE beans and soup in 2-qt. casserole; top with VELVEETA.
ADD water to butter in medium bowl; stir until melted. Stir in stuffing mix just until moistened. Spoon over bean mixture.
BAKE 35 to 40 min. or until heated through.

look up Giada's vegetable parmesan - it's delicious.
I also love spaghetti squash - with butter and cheddar cheese.

Roasted Brussels Sprouts with garlic and bacon
you basically cook rough chopped bacon in a sautee pan until almost cooked then throw in the brussels Sprouts into the pan with the bacon drippings and sautee until golden brown. The last 2 minutes throw in the bacon and some chopped garlic.
I hated Bruseels Sprouts until I made this.
IMO- this is out of this world!

simple - saute garlic with olive oil, toss in spinach until slightly wilted then top with Parmesan cheese.
