Travel with a toddler

we are taking several trips this summer and needs some tips:

what are some good toys or things to do in the car? My 2yo is usually good but one of our trips is several hours so want to make sure have lots to keep him busy.

Also what are some good foods to bring for snacks. We usually try to eat healthy whole foods but wont have a fridge so want to try to at least have somewhat healthy options. I can bring things like apples for the hotel but when we're on the go its too hard to cut up etc. Any ideas?

We too are going on a long trip. I got a few toys from the clearance section at Target.
I got:
look and find books
mad libs (for my almost 6 year old)
new leapster games
"autograph" books and stickers in the theme of the places we are going to so they can decorate the pages
Color wonder paper and markers
We are flying to California so I need to keep them busy on the plane.
