soft cheeses are only to be avoided if they are not pasteurized.
If it is sold in the supermarket chances are it is pasteurized.

I think you can have fresh mozzarella. I just looked it up today. It's the mold cheeses that are the issue... Feta, Brie etc

Having GD string cheese is my savior right now for my protein. My endo reccomended it, so it's totally fine.
