Day 3 of the Low Carb Lifestyle

Yesterday went exactly as planned! I made omelettes and went for a slightly over 3 mile walk with my friend.

Today I had a cup of tea with splenda for breakfast, and a teaspoon of peanut butter (I ate it right off the spoon- I know that's kinda gross) and a U pick 2 from Panera for Lunch (greek salad and french onion soup-no croutons!) Told them to leave off the bread so I wouldn't be tempted.

Tonight I'm going to dinner with my mom to Mama's Pizzeria in Copiague. I plan on having the Warm Salad:
fresh romaine hearts, artichoke hearts, fresh mozzarella tossed in our signature balsamic dressing topped with sauteed onions and peppers . It's sooooo yummy and pretty Low carb (other than the balsamic dressing).

It's going to be tough to resist the warm garlic knots and crusty bread....I'm already hungry.

I'm not sure if there will be any exercise tonight. I may walk to my mom's, but she lives less than a mile away, so that's not really exercise.

Hmm...I just looked at the menu for Mama's again online- this salad sounds good too! Maybe I'll have them add some chicken to either of them since the only protein I had is from the PB this morning.

Chopped salad: fresh iceberg lettuce, mixed baby greens, roasted pepper, tomato, pepperoncini and cucumbers with fresh mozzarella, tossed in a light olive oil, lemon dressing

Anyway- today's photo is the new boots that I'm eyeing...I love them, but my calves need to shrink (which is doubtful- I've always had big calves- even at my thinnest)

Low Carbing It - Day 2

So, yesterday's blog was kind of false. I left all of my stuff for omelettes in the fridge at work (I went to the supermarket at lunch). So, when I got home at 6, I didn't have the time to walk to the supermarket before starting dinner.

I drove to stop and shop and got ingredients for baked pork chops with sauerkraut.

My mom used to make this and it was the only way I liked pork chops- the saurkraut was always more savory than sour and the pork stayed moist.

I think I used too much sauerkraut because it was a bit too tart for my taste.

Recipe:

4 pork chops
Large can of saurkraut- drained (I used 2 large cans- WAAAY too much!!)
1/2 cup apple juice (optional- my mom doesn't use it, but i thought it would be tasty-it really didn't make much of a difference)
large onion- sliced

-Pour saurkraut into a 9x13 baking pan (glass or metal- I used nonstick)
- add in onions
-salt and pepper pork chops and place them on top of sauerkraut
-pour apple juice over the top
-Bake at 350 for an hour- turning porkchops half way through.

DH loved it, I was ambivalent and only ate half of one and a small salad of iceberg lettuce with cucumber and red onion. Had some peanuts while watching TV (Dry roasted in the shell- no salt- had about a handful).

Since I didn't walk to the supermarket, I went for a quick walk/jog while the pork chops were cooking. I did about 1.5 miles in 20 minutes. My calf felt really tight so I was too uncomfortable to go any faster. I have to up my H2O intake.

Today I skipped breakfast. For lunch I needed fast and cheap so I went to Wendy's and had a Jr. Cheeseburger (NO BUN!!) and a side caesar salad (NO CROUTONS!!) with a diet coke.

Tonight I'm going to make the omelettes I couldn't make last night. As a matter of fact, I'm going to put my keys in the fridge so I don't forget the stuff!!

I'm supposed to go walking with a friend later on tonight, but that all depends on the weather.

Going Low Carb Again

I lost a bunch of weight a few years ago doing atkins. I fell off the wagon and gained most back. So, it's time to join DH (who's cut out the carbs already) and drop some weight.

I think this time I'm going to follow a South Beach type approach to make it more managable long term.

So, I'll update regularly with menus and recipes (if I try a new one) and my exercise du jour.

Today was already a bust- since I started the day with Newton Fruit Crisps for breakfast (only 100 cals...but sooo much sugar!)

Lunch was greek salad from Panera with only half the dressing BUT I ate a few bites of the whole grain baguette that came with it. AND I had to try a bite of the maple walnut cake we had for someone's bday (I really only had a bite!!)

Dinner is omelettes- 3 eggs, tomato, pepper, onion cheese and bacon.

Exercise: Walking to the supermarket and back for tomorrow's dinner ingredients.

I'd like to lose at least 30lbs.
