Side dishes for grilling?

DH grills about 3-5 times a week - steaks, burgers, chicken, ribs, etc.

Trying to come up with more side dishes. I'm plant based, so I need veggie based dishes. Not looking ofr carby salads (pasta/potato). Ideas?

I found a recipe for mushroom and cauliflower that I'm going to try this week. https://www.eatwell101.com/garlic-mushrooms-cauliflower-recipe

If you're plant based, you've probably already tried most ideas since it's limited (it's easier to come up with vegetarian since you can add dairy or eggs). The other things that come to mind are asparagus, corn on the cobb, grilled brussel sprouts, etc.

I love grilled veges. Brussel sprouts, green beans, asparagus, pretty much anything on a grill pan and it gets that nice charred taste.

My favorite is sweet potatos though. Slice them thin, toss in olive oil, salt and pepper and lay them flat on a vege grill pan. Turn them mid way through- they come out crispy and delicious.

Maybe some kind of bean salad or chickpea salad, or like a couscous side? Carby, yes, but not like potato or pasta carby. lol

along the same line of grilled veggies

i love:
eggplant, onions, peppers, sweet potatoes, zucchini, etc with olive oil salt pepper oregano... then drizzle balsamic

yum!!

I love Italian chopped salad with chickpeas, pepperoncini, olives and cucumber.
Mexican bean salad
Corn salad with basil
Quinoa tabbouleh
Cucumber salad
Quinoa salad with spinach and fruit
Vinegar based coleslaw
I love all kinds of veggies in the grill too including zucchini, eggplant, broccoli, peppers and onions, corn, sweet potatoes, asparagus.

thanks, ladies! Yes, we do grill a lot of veggies, just trying to think of some other ideas. I've also been doing stuffed portabello mushrooms, which are so good. I forgot about bean salads- I like to make them and use for the whole week. vinegar slaws are a great idea too. Grilled sweet potatoes sounds so yummy!

I made a pad Thai like salad and it was so good. No noodles. Red cabbage, carrots, peppers, green onions and cucumbers. Made the peanut sauce and topped with chopped peanuts.

Do you eat eggs? You could do deviled eggs.

I also like Greek layer dip. Hummus, tziki, chopped lettuce, tomatoes, cucumbers and olives. You could dip pita chips.

vegetarian baked beans.

lentil salad with chopped veggies and a vinaigrette.

Experiment with different salads: use a different green and add toasted nuts and fruit.

Don't forget you can also roast lettuce on the grill. We like to quarter a radicchio (a piece of core on each quarter so it stays together), throw it on there to soften up and get some char, and then salt/pepper/balsamic vinaigrette. It's really good.

I had a grilled Romaine salad at a restaurant once- it was fabulous.
