Re: Diabetics ...... pasta question
Honestly any pasta will spike insulin. Dh uses zoodles or spaghetti squash. They also now have a linguine made from hearts of palm that is low glycemic

Diabetics ...... pasta question
When I had gestational diabetes, my diabetes educator recommended Barilla protein plus, because the protein helps stablize your blood sugar. Still should only have one serving. It gave me good numbers, while a similar serving of regular pasta usually gave me high numbers.
Also need to be mindful of the sauce. My MIL's tomato sauce always gave me high numbers, even if I skipped the pasta and just had it on chicken. My husband's sauce usually gave me fine numbers with the protein plus pasta.

Re: Diabetics ...... pasta question
I think high fiber pasta ( the ones they sell w like 6+ g of fiber per serving) would be better than white. Also if you eat it with protein & fat like cheese or chicken I think that should help prevent insulin spike. And look for a lower sugar sauce.

Re: Diabetics ...... pasta question
I had gestational diabetes if that helps at all. I ate whole wheat pasta except a rare occasion that it wasn’t an option, like from a restaurant we take in from sometimes. Either way, I found it was more about portion size and what I ate with the pasta that matter most. Usually I’d have a small amount (small, relative to the American standard ) and load up on broccoli which is supposed to stabilize blood sugar and always helped me get my best numbers, and protein like meatballs for example. Never been a problem.

Re: Diabetics ...... pasta question
Definitely get a Glycemic Index book. There are charts of which foods will spike blood sugar, and which ones are more gentle. There are lot of on-line charts and resources, too.
https://universityhealthnews.com/daily/nutrition/glycemic-index-chart/
I was diagnosed with Type 1 about 33 years ago, before any of these charts were published. It was discovered in 1981, and the first charts were published in 1995.
I figured out a lot of this by trial and error.

Diabetics ...... pasta question
My husband was just diagnosed with Type 2 and has joined a bunch of Facebook groups that have been helpful. But they all recommend this pasta:

It's apparently found in the refrigerated section of the produce aisle by the tofu.
