Wanted to share - Rainbow Cookie Cake with Crumbs
Just wanted to share this cake I made, it was OFF THE HOOK!!! I adore rainbow cookies and this cake just took them to the next level, it was really delish. If anyone is interested in the recipe you can check out my blog.

I tried this. going to be brutally honest. Overall, I did love it, but the cake was a little dry and I didn't like the crumb part on the top. Next time I am going to try a variation of this, with a different crumble topping. the extra jam I added helped a bit with the dryness of the cake. But thank you for putting this out there! It was fun to make on a rainy day.

Sorry the cake was dry, did you carefully watch the cooking time? Because the cakes are thin they do bake fairly quickly and even extra minute or two in the oven can make the cake go from moist to dry.
Also, when assembling you can brush the layers with a simple syrup before adding the jam, that will help to both add and maintain moisture.
As for the crumbs, feel free to play around with them and try your own crumb recipe. Or alternatively, leave them off all together and just make a basic rainbow cookie cake. I've been making this cake for years, I only added crumbs recently to try and replicate the cake I came across online. But they aren't a necessary component to the recipe.
Hopefully you have better luck next time! Thanks for the feedback!

Just as a general FYI.............while you can keep cakes in the fridge I find that they tend to dry out more. Aside from letting this cake set up in the fridge for a few minutes, I kept it at room temp. I try to avoid the fridge if I can.
If you keep it in the fridge, just make sure it's tightly wrapped so that it dries out less and doesn't absorb other flavors in the fridge. Hope this helps!! Enjoy your cake!!
