alternate ways to coat chicken cutlets (other than egg)

I just recently discovered that I have an egg intolerance. I want to make chicken cutlets but I have always used egg to coat the chicken. What else can I use in place of egg?

Almost anything with a little viscosity will work.

I've used Mayo (which has eggs)
Salad dressing (make sure it's egg free)
Sour Cream
mustard
and. my favorite.. yogurt

You can season the Mayo, Sour Cream, Yogurt or mustard before using. Sometimes I'll add in some minced garlic or applesauce or chili powder or whatever depending on the flavor profile I want. Mustard mixed with mayo, egg, sour cream and yogurt is really good.. brings out a little extra context to the meal.

The crumbs do NOT seem to stick as well without eggs.. so sometimes dipping and then letting them cool in the fridge to get 'stickier' works.

I've used lemon juice, Rachel Ray has that in one of her cook books.

I just used italian dressing for the first time the other day then dipped in plain panko - they came out really good!

I've used:

ranch salad dressing
italian salad dressing
caesar salad dressing
dijon mustard
dijon mustard mixed with butter
balsamic vinegar mixed with dijon mustard
buttermilk

You can be pretty flexible and creative when it comes to coating chicken cutlets. HTH!

Low Fat Caesar salad dressing and Panko breadcrumbs then bake them. Yummy!

yogurt, milk, soy milk, or just dust them with flour works well too if you aren't using breading.

There is a ww recipe that you use plain Greek Yogurt...I lovvvvvve them that way. They are so moist!!

I just realized that it doesn't specify Greek yogurt, but that's what I use.


2 spray(s) cooking spray
1/2 cup(s) plain fat-free yogurt
1 Tbsp paprika, sweet-variety, divided
15 cracker(s) saltine cracker(s), crushed into crumbs
1 tsp table salt
1/4 tsp black pepper, freshly ground
16 oz uncooked boneless skinless chicken breast(s), four 4 oz thin pieces
1 Tbsp parsley, fresh, chopped
1/2 medium lemon(s), cut into 4 wedges
Instructions

Preheat broiler and coat a baking sheet with cooking spray.

Place yogurt and 1 teaspoon of paprika in a small shallow bowl; mix to combine. Combine cracker crumbs, salt, pepper and remaining 2 teaspoons of paprika on a large shallow pie plate; stir to combine. Place each chicken cutlet in yogurt mixture and turn to coat. Next, place chicken in crumb mixture, turning to coat both sides and pressing lightly to make crumbs stick.

Place coated chicken on prepared baking sheet and lightly spray with cooking spray. Broil 3 to 4 inches from heat source until golden brown and cooked through, flipping once, about 4 to 5 minutes per side. To serve, sprinkle with parsley and garnish with lemon wedges. Yields 1 piece of chicken per serving.

I always use honey mustard mixed with soy sauce instead of egg.. its really good and actually tasted way better than the egg.. also the bread crumbs stick better
