recipe calls for 2 eggs... but i only have 1

can i substitute anything for another egg? or just leave it out? im making brownies.

Did not know this, thanks! I love my brownies fudgy. I think there should be a baking cookbook that just tells the science of baking, like what makes cake fluffy vs dense and things like that.

There is! Actually 2 and probably more. The America's test Kitchen cookbook has all this info as well as one by Alton Brown-can't think of the name right now but will check when I go downstairs
