Weekly Menus Ready? 2/28
Happy (almost) March!
I had a real re-arranged week last week. Oh well. Today I am doing Chicken & Dumplings instead of peppers because .. well .. I guess it doesn't matter. I just AM. And no mussels yesterday. *sigh* Onward and Upward.
Sunday: MIL's house
Monday: Turkey Stuffed Peppers, Cucumber Salad
Tuesday: Beef Stew, Bread, Salad
Wednesday: Chicken Francaise, Rice, Roasted Broccoli
Thursday: Ravioli, Garlic Bread, House Salad
Friday: Shrimp Scampi, Rice Pilaf, Veggie TBD
Saturday: Steak Diana (courtesy of Infiniti Gal!), Scalloped Potatoes (Subject to change), Brussel Sprouts.

Just finished mine...
Tonight - DH and I are going to dinner in the city for our weekly date night
Sunday: Cuban Arroz con Pollo, Salad
Monday: Baked tilapia with roasted vegetable couscous
Tuesday: Mongolian Beef over brown rice
Wednesday: Whole wheat pasta with broccoli rabe, white beans and turkey sausage
Thursday: Take out or leftovers
Friday: Tomato Basil Soup and Grilled cheese sandwiches

Tuesday: Shrimp stir-fry with brown rice
Wednesday: Leftover baked ziti
Thursday: Spinach and feta omelettes
Friday: We both have to work late and won't be home for dinner
Saturday: Probably dinner out or takeout

Tonight- Buffalo chicken pizza
Mon.- Beef stew with buttered egg noodles
Tues- Chicken soup with tubettini, fresh bread, salad (or possibly chicken salad sandwiches)
Wed.- Shredded pork tacos, homeamade guacamole, black beans
Thurs.- Linguini & meatballs or baked ziti
Fri.- Take out

I am happy to say that last week, I completely stuck to the menu the whole time!!!  It was great that we only ate lunch out yesterday for a grand total of $19.58!! We easily would spend that 3 more times during the week and then some!
Okay, what I have in my head so far...
Sun: Soup
Mon:Fettucine with shrimp and peas in a cream sauce.

Tues: Scallion Salmon with Olive and Lemon quinoa (recipe from this month's fitness magazine)
Wed:Soup and Salad Night
Thurs:Eggplant and Chicken Parm
Fri: Homemade pizza night!
Sat: Out for dinner

I also followed my menu completely last week!
Sunday - Turkey Chili w/ cornbread
Monday - Panini's from La Bottega
Tuesday - My attempt again at Jerk Chicken Pasta, w/asparagus & garlic bread
Wednesday - beef w/ broccoli, rice
Thursday - Chicken Pomodoro, sauteed spinach
Friday - Seafood Paella
Saturday - roasted Chicken, mashed potatoes, carrots, string beans

Sunday - dh is making beef with broccoli - he also made banana bread for dessert
Monday -chicken legs baked potato, creamed spinach and tomato and lentil cous cous
Tuesday - pork chops cous cous and veggie
Wednesday - meatloaf, potato gratin, veggie
Thursday - fettucine alfredo with peas
Friday - chinese take out

Sunday: Steak with brown rice pilaf or red mashed potatoes and salad
Monday: Homemade chicken pot pies
Tues: Late night in the office...keeping it simple; Soup (Sweet potato for me and Italian wedding for DH) and Sandwich/grilled cheese
Wed: have a late appointment, probably go out for 10 cent wings
Thurs: Chicken cutlets and spinach/cheese tortellini salad
Fri: DH's Birthday...going out for Mexican
Sat: Still waiting for him to tell me what he wants for his birthday meal with the family

Wed-lamb chops (for DH) with veggies and some carb..rice or potato--soup or something light for me
Thurs- tacos or chicken fajitas , guacamole
Friday-think we are going out with in laws

Saturday: Out for dinner
Sunday: Not sure yet, but maybe a pot of sauce with all the meats and what not
