Somewhat parenting related...Can you share your "make ahead" meals?
I'm trying to find things that I can make the day before so DH can just pop them in the oven on the days I work. That way, dinner is quick and we all get a good meal.

Spanish chicken and rice
Vegetable/chicken/beef Lo Mein
Chicken parm
And using the crockpot helps a lot.

I havent done this in awhile but I used to make a roast of something...maybe a roast chicken or a roast beef...then you'd have it to slice up and serve it with maybe instant mashed potatoes. They now have those SteamFresh Vegetables which are really easy and quick.

This book: The Best Make-Ahead Recipe has some really great suggestions, including instructions for freezing if you want to cook way ahead of time...

Pasta w/turkey meatballs
Chicken cutlets
Sausage & peppers (freeze well also)
Stir fry
I also make lots of roasted veggies at once & freeze them in portions.

I make chili in the crock pot, or a sauce and all I have to do is put water on for the pasta.
I freeze lemon chicken once it's cooked
Chicken cacciatore
I freeze a raw turkey meatloaf that I premix and pop it in the oven when I get home to cook.
I make turkey meatballs, cook and freeze them. I'll cook turkey sausages, too and put them all in the sauce and freeze that way.
Hawaiian chicken freezes nicely, just thaw and warm up.

Morgan, my sister, my mom and I get together every couple of weeks on a Sunday and cook a ton of food, then we portion it out into freezeable containes and swap. We end up with 6 or 7 meals each, but only have to make 2 or so. Do you know anyone you can do that with? It's such a help!
