Help Me - Cheese Nachos

The one thing I crave and haven't seemed to figure out how to make... melting cheese onto nacho chips to make my own nachos grande....

Whats the secret?!?!? Help!!!

I use shredded cheese (vs cheese slices) or you can use this.

You want to start with a roux which is just a mixture of equal parts butter and flour. Cook that until it's slightly browned and toasty. Then add in cold milk, this will create a bechamel sauce. Once the bechamel is warmed through you will add in your seasonings and shredded cheese.

To avoid a grainy cheese sauce, use a mixture of cheeses. Cheddar cheese alone tends to become grainy so mix it with things like American cheese or Monterey Jack which melt nicer. Serve the cheese sauce immediately after preparing, as it cools the structure will change and it won't be as smooth and creamy.

Help Me - Cheese Nachos

I'd like to add to Hofstra's post: Shred or grate the cheese yourself from a block. Shredded cheeses in the package have an anti-caking coating that won't allow them to melt as evenly and as smoothly as you would like. If you want a real "con queso" type, stir in some original Rotel in a can. It is the BEST

I buy the Ricos cheese sauce and pour it on chips when I want "taco bell" type nachos. Otherwise I just put shredded cheese on the chips and microwave them!
