My MIL's recipe is my favorite and really easy.

1 28oz can of tomato puree
1 28oz can of whole peeled tomatos
2 8oz cans of tomato paste
3 - 5 fresh leaves of basil
garlic powder (about 5 shakes)
pepper (about 5 turns)
1 lb. chopmeat browned

1. In bottom of a large pot, pour small amount of olive oil.
2. In a blender, blend whole tomatos with about 1/4 cup water. Pour into pot.
3. Pour into pot tomato puree. Add both cans of paste, followed by 2 of the paste cans filled with water.
4. Add basil, garlic powder, and pepper. Then add chopmeat.
5. Cook over LOW heat, covered, for 3 hours. Mix occasionally.

**usually about one hour into cooking, I taste the sauce and add more garlic and pepper as needed.

I usually chop up a good sized sweet onion and 3 - 5 gloves of garlic. Then I take a bit of olive oil and heat it up in a non-reactive pot or large skillet (I use a cast iron pot). Once the oil is heated I toss in the onions and garlic and get them nice and soft - probably about a minute of sauteeing. Then I toss in about a half lb of ground beef and a half lb of mixed sweet and hot sausage (the meat - not the stuff that is in the casing. If you can only find the stuff in casing - squeeze the insides out and put it in.). I add a little salt and pepper to taste and stir and mix until it is all integrated together.. no giant lumps of sausage. Once the meat is almost completely browned and integrated, I add my regular sauce to it and heat it for a few minutes. I tend to add a bit of red wine at that time and let it simmer for about 30 minutes and serve.

If you don't make and freeze your own tomato sauce, you can use jar sauce to add to the meat mixture. If you make your own sauce I would suggest preparing it before you prepare the meat.

2 cans crushed tomatoes
3-4 cloves garlic
1 can tomato paste
2 bay leaves
oregano (to taste)
red pepper flakes (to taste)
salt & pepper (to taste)
1 tablespoon EVOO
2 teaspoons sugar (cuts acidity)
1 pound ground meat (beef, sausage, veal-any combo or just one will do...)

Saute chopped garlic in EVOO
Add ground meat and brown (drain at this point if needed)
Add crushed tomatoes, paste, bay leaves etc.
Bring to a slow simmer, stirring frequently.
Simmer for 1.5 hours stirring every 15-20 minutes.

There will be plenty of leftovers depending on how many you are serving. I just freeze in ziplock bags for an easy mid-week meal.
