Buffet Style Brunch ideas - POST HERE

I am having a brunch for a small group but I need it to be buffet style.

Looking for some great ideas!

I was thinking a Quiche, maybe make your own lobster rolls.....

muffins
scrambled eggs

some people do a pasta dish - like penne ala vodka

maybe a yogurt station - vanilla yogurt with different add-ins

brunch is my favorite meal!!!!!

potatoes with peppers and onions....like hash browns or just bite size chunks

muffins, croissants, bagels, lox, fresh fruit

an omlette station?

mimosas, OJ, pineapple juice, cranberry juice

i have a recipe that everyone loves for baked french toast---you don't even need syrup for it really - just eat it as is!

prepare it the night before and just bake it in the morning.

6 eggs
1 cup of milk
1 loaf of bread
1 stick of butter
1 cup brown sugar
1 tsp cinnamon
1tsp vanilla

mix butter cinn. vanilla, sugar together -- sprinkle 1/2 of mixtuer on the bottom of a large baking dish.

remove crusts from bread and make one layer in dish.

pour half of egg/milk mixture over bread.

put a 2nd layer of bread in baking dish.
pour over the rest of egg mixture and crumble the rest of sugar mixture on top.

let it sit in the fridge overnight for the bread to get nice and soaked up.

bake in a 350 oven for about 20-25 minutes or until nicely browned.

I do a Mother's day brunch every year. I put out mini-muffins for when people arrive. Then I have frittatas or quiche, bkfst sausage, corn beef hash, fruit salad, hash browns, bagels with cream cheese and lox, some type of chicken dish, pasta salad, and garden salad.

crab newburg with toast points is always awesome for brunch and it's pretty easy to make, mccormicks makes the sauce packet and then you add stuff....

DH and I made a frittata the other day and it was great. You use potatoes and onions sliced thin, saute with some rosemary, salt, and pepper. Cover with a lid for 10 minutes until the potatoes get tender, then uncover and cook for 5 more minutes to cook off the liquid. In the meantime, mix 5 eggs + 5 egg yolks in a bowl with some parsley, salt and pepper. Add the egg mixture to the pan. Turn the pan to low and let the egg slowly cook for 10 minutes, scraping the sides gently so the uncooked egg moves to the outside. Then put under the broiler for 3 minutes so the top finishes and gets golden brown (you can add cheese on top here).

It was soooo yummy!

I have a yummy french toast recipe...

1 loaf of wonder bread
1 package cream cheese
1 dozen eggs


Cube bread and spread the cover bottom of baking pan. cube cream cheese and cover bread. Use remaining cubes of bread to cover cream cheese.

Mix eggs and pour over bread and cream cheese. Bake at 325- I think only 20 minutes, or until golden brown. Towards the end you can top with maple syrup... yum yum!

I love your idea of make your own lobster rolls. Make a quiche, the lobster rolls, some kind of egg dish that can be prepared a day in advance--that just needs to be warmed. Then do some different muffins, like blueberry, chocolate chip, corn, then a fruit salad and the penne ala vodka. That's a whole lot of food but soooo cute and I love this idea for a buffet brunch get to gether.

I made this frittata for a Mother's Day brunch. Everyone loved it. And it was easy to make.

Baked Asparagus and Yellow Pepper Frittata

Adding this b/c DH's aunt made this baked french toast and it was delicious!

1 loaf French bread (13 to 16 ounces)
Butter, for pan
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Raspberry Syrup, recipe follows

Slice French bread into 20 slices, 1-inch thick each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices.
In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F. Spread Praline Topping evenly over the bread and bake for 45 minutes, until puffed and lightly golden.

Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and blend well. Spread over bread as directed above.
