baked potato soup recipe!!
okay here it is!!
quarter 5-6 red potatoes in a bakeing dish with olive oil and salt & perpper and bake @ 350* until tender
while potatoes are baking in a large sauce pot (or pasta pot) saute in olive oil - onions once translucent add carrots and celery and c few strips of bacon cut up into small pieces. once all is golden brown drain off excess fat and add 1/2 cup of dry sherry to pan and simmer on med for about 5 minutes.
once potatoes are done add half to pot. the remaining potatoes through into a food processor and pulse until all mushed like mashed potatoes, (or in mixing bowl with whip) add a carton (32oz) of chicken stock (can be found next to the soup) and 2 cups of water. simmer for about 10 minutes and add 1 cup of heavy cream or light whipping cream or fat free half and half. simmer again for another 10 minutes if not thick yet mix soem flour with water and ad a couple tablespoons and bring to a boil until right consistency, then add about 1/2 cup of shredded cheddar cheese and serve!!!

Ohhhh you HAVE to post the recipe! Houlihan's baked potato soup is my FAVORITE! I can't find a decent canned one anywhere!!!!!!
