Here is the olive oil cake recipe. I tried it today and it was out of this world. I could have eaten it for lunch! Delicious. I loved the texture- almost like a cornbread but not.

If you make it, be sure to use "light" tasting olive oil- not extra virgin. Extra virgin tastes too olive oily for a cake. The light has a much milder flavor.


Olive Oil Cake

Anyone following ketognic diet?

We're doing keto here in my house. I make a chocolate mousse that is amazing if you're looking for a dessert. Just heavy whipping cream, a little cocoa powder, and some stevia or your sweetener of choice whipped up. quick and easy.

Hubby was thinking I was nuts to try this but he lost 12 lbs in less than a month, never feels deprived, is satiated and feels amazing. I did low carb for the last year so it was a pretty easy transition for me, but I went from Low carb, high protein, moderate fat to low carb, moderate protein, high fat which was a bit of an adjustment.

Just wanted to add a tip for everyone doing keto.
If you are making a soup or stew that would normally call for potato, a cut up turnip takes on the exact texture of a potato when thrown in a soup or stew.

Dh has used it in crockpot beef stew and more recently, a new England clam chowder that is out of this world.
I would not know the difference whatsoever when it's used in these things.

Hi all, I as just actually looking into this diet and remembered this thread
I downloaded an app to track, but have a hard time NOT overeating carbs. Anyone have any advice or foods they eat that are low/no carb? Trying to stay below 30grams seems impossible to me right now

Hi all, I as just actually looking into this diet and remembered this thread
I downloaded an app to track, but have a hard time NOT overeating carbs. Anyone have any advice or foods they eat that are low/no carb? Trying to stay below 30grams seems impossible to me right now



My DH eats a TON of leafy green veges- spinach, kale, etc.
Tons of Avocados
For lunch he will make a HUGE salad with a little chicken (not much because you have to watch your protein intake on it) and load it up with nuts, avocados, coconut oil, artichoke hearts, cheese, etc
He said it's so filling he would be fine to not eat dinner.

For dinner he makes a ton of stuff- i eat it too- we had tacos yesterday- he had the meat and other fixings over a salad- I had the shells

He makes a lot of chicken dishes- with recipes he finds online. He will sub these carb free noodles- shirataki noodles- for pasta for himself.

There are a ton of keto sites, blogs, you tube channels, pinterest boards- all with recipes.
Most of the stuff is delicious.

The other night he made this "Big Mac" salad and omg it tasted EXACTLY like a deconstructed Big Mac without the bun. I was dying- it was sooo good.

He also makes desserts - so if you are looking for a sweet craving, there are plenty of recipes for that too.

Bacon and Eggs is good for a meal- he will have that with half an avocado.

Omelettes

We make New England clam chowder in the crockpot and sub turnips for potatoes and it is delicious.
You can also do a beef stew with turnips instead of potatoes.

He eats a lot of asparagus and spinach and green beans when it comes to vege sides.
All lower carb veges.

He also said that once you get over the hurdle of the first 2 weeks or so, and the carb addiction, you don't even crave or want or miss the carbs anymore.

Lunch- grilled chicken salad, tomatoes, olive oil and balsamic vinegar for dressing
Dinner- grilled chicken w/ broccoli and ranch dressing
Snacks- Almond milk smoothie with berries, celery with a individual guacamole cup, tablespoon of almond butter

You must be strict on Keto ALWAYS. If you go over 25 g of carbs a day you are risking getting out of ketosis and then you have to work to get back in it again.

Its not hard to follow but it is strict in those terms. Once you have been in ketosis for an extended period of time you may be able to go slightly over that amount but you should never be having a "cheat" of carbs..

It doesn't matter if you have berries as long as you stay under 25 g of carbs per day.

I don't think you can have any fruit at all on it from day one. I do believe you can have certain berries that are lowest in sugar- but in small amounts.
You also have to make sure you are eating enough fat to get yourself (and stay) in ketosis. That is where you need to be to burn the fat.
DH uses a tracker on his phone to track his macros so he knows exactly how much of everything he has in a day.
It's not just about avoiding carbs and sugars- it's about having the exact right amount of fats as well. Certain nights he will make a bulletproof coffee or eat some fat bombs because he was too low on fat that day.

If you’re craving some of the starchier veggies- Radishes are awesome roasted- they taste like potatoes. You can make “fries” with rutabaga, turnips, and jicama.

Avocados are considered a fat. I know he eats them all the time, so I don't think they are very high in carbs at all

I do not know much about keto. But if you simply do a meat in the crock pot with veggies (I do carrots, onions, celery, and garlic) you can eat and cook for the suggested time and shred— voila.

Shred the meat mixture after done cooking, spread in a pan of some sort of pan, boil up your turnips (celery root— is that allowed in Keto?), purée, and spread on top, bake until warm and crisp, then you are good! It’s kind of complicated, but it gives leftovers for days.

I’m sure your DH can make it Keto friendly.

That link isn’t the best. I’ll search for a better one if you are interested. Let me know.

Shred the meat mixture after done cooking, spread in a pan of some sort of pan, boil up your turnips (celery root— is that allowed in Keto?), purée, and spread on top, bake until warm and crisp, then you are good! It’s kind of complicated, but it gives leftovers for days.

I’m sure your DH can make it Keto friendly.

You could probably just fry up some chopped meat, too. I do duck in the crock pot because I like duck. YOu could probably just replace that with chicken thighs in the crock pot if you don’t like duck. Enjoy!

So DH made 2 keto desserts recently that were out of this world.
If you served them to someone, they would never know.

one was a lemon cheese cake with an almond flour crust. It was amazingly good

The second was "Twix" bars. To me they didn't taste like Twix so much but they tasted delicious.

I actually like his desserts more than my own!

If anyone doing keto wants the recipes, let me know.
