Any recipes for easy lunches that I can cook at the beginning of the week?

I've been doing salads for the past 4 months and I want to switch it up. But I LOVE LOVE veggies and the idea of doing low carb for lunch. Any stirfrys or meat/veggie dishes that you can recommend? Something that does well as a leftover?

Thanks!

ETA: perhaps a crockpot recipe that would do well as a lunch?

I usually cook a little extra for dinner and then use those leftovers as lunch as my husband doesn't like leftovers.
(I also use alot of turkey products)

-Tukey Sausage with Onions and Peppers

- Turkey Burgers

- We do taco in a bowl for dinner sometimes (taco fixings without the shell). I usually reserve some of the meat and throw it in a salad the next day.

Extra chicken or turkey meat, I'll make chicken or turkey salad from it using light mayo.

how about a nice chicken salad sandwich? i had this at a baby shower and it was so good!! they served it on croisants- omg! so delish! i dont normally like curry powder but i could taste just a hint of it and it really gave it a nice subtle kick.



1 to 1 1/2 cups diced chicken
8 to 12 red or green seedless grapes, halved
4 tablespoons mayonnaise
1 rib celery, chopped
1 green onion, with about 2 inches of green, chopped
salt and pepper, to taste
dash curry powder, or to taste, optional

I second chili. I would also make a variety of soups in the crock-pot. So yummy.
