8/1 Weekly Menu Thread.. Boy is this late!
Sunday: BBQ for nieces bday
Monday: Taco night - with all the fixin's
Tuesday: Chicken Scallopini, Linguine, House Salad
Wednesday: BLT's
Thursday: Porterhouse Steak, Crash Hot Potatoes, Sauteed Asparagus, Tomato Slices
Friday: Salmon with Citrus Buerre Blanc, Grilled Zucchini, Brown Rice Pilaf
Saturday: Pan Seared Pork Chops with Onion gravy, Brown Butter Noodles and Green beans.

fri - salmon, tuna, shrimp, lobster, calamari (party)
sat - baked ziti, lasagnia (party)
sun - soy vey chicken, udon noodles, broccoli and cucumbers all home made
mon - sweet and sour meat balls with tater tots
tus - turkey meatballs and spaghetti w/ sauce and green beans
wed - sweet and sour chicken, rice and veggie
thurs - ? I need dinner ideas
fri - party?
sat - party?

Sunday: Grilled wild salmon, brown rice pilaf with onion and mushrooms, steamed asparagus.
Monday: whole wheat spaghetti with "hidden veggie" bolognese sauce (sneaky way to get DD to eat veggies), arugula salad
Tuesday: Galician style garbanzo bean stew with ham and spinach over rice.
Wednesday: ropa vieja, white rice, mixed greens
Thursday: Roasted bone-in chicken breasts and carrots w/ rosemary, couscous, mixed greens

Sat: BBQ Burgers, dogs, baked beans, and chips
Sun: BBQ Ribs, Baked Corn Fritters, salad
Mon: PW Crispy Yogurt Chicken (cutlets) and PW Lemon Pasta
Tues: Steak Fajitas, Yellow Rice, Homemade Guac & chips
Wed: Pasta with Meatsauce, Crusty Bread, & salad
Thurs: Have enough leftovers from Monday for a whole other meal
Fri: any other leftovers or pizza

Wed.- Chicken and noodles
Thurs.- Taco salad with chicken quesadillas
Fri.- Pasta night (either penne ala vodka or rotini with broccolli, garlic, EVOO and romano cheese)
Sat.- Wedding

Thurs: Buttermilk corn cakes, cherry salsa, lemon grilled chicken
Fri: Greek takeout

Monday: Skirt Steak, Mixed veggies and pasta side
Tuesday: hot dogs, potatoes & eggs, souffle pancake
Wednesday: French onion crockpot pork chops, whole wheat egg noodles, broccoli
Thursday: PW Crispy yogurt chicken, angel hair pasta, salad
Friday: grilled pizza or souffle pancakes and sausage
Saturday...take out!

Can I have your recipe for baked corn fritters? They sounds delicious.
sure....it's super easy and kind of no frills 
I made mashed potatoes, stirred in a drained can of corn (or 2 depending on how much potato you've made) and basically dropped it on a greased cookie sheet (about the size of a cookie after it's baked) and then sprinkled with seasoned breadcrumbs on top. Broil and watch them until they get crispy (about 10-15 mins in MY oven). That's it. If you want to fry them, like old school corn fritters....you add egg and breadcrumbs to the mixture (it's what holds them together). Those are ridiculously delish, but I tried to go the healthier route and they turned out really good. Enjoy

Sunday- Baked cod w/ a mushroom sauce, potatoes and carrots.
Monday- Taco night- soft and hrd taco's w/ all the fixings and rice.
Tuesday- Marinated Ginger chicken thighs, rice, and salad.
Wednesday- Diner
Thursday- Pork chops w/ apricot glaze,potatoes, string beans.
Friday- BBQ hamburgers and Hot Dogs, salads.
Saturday- My night off!
