Healthy meals?

Looking for some healthy dinner and lunch ideas that are quick and easy. What are some of your favorite healthy dinners and lunch ideas? We normally eat pretty healthy for the most part but I feel like we eat the same things ALL. THE. TIME.

Some of my faves:

Cauliflower chicken fried rice
Cauliflower mash and turkey meatloaf
Turkey meatballs stuffed with mozzarella and little marinara sauce
Brocolli tator tots or broccoli mash
I season chicken and freeze it - i will season with Caesar or ranch dressing and then defrost and grill with a side or on salad
Skinny marinara chicken or chicken caprese (mozerella, balsamic & basil)
Carrot mash with maple syrup or honey glazed carrots
Lemon chicken

Healthy meals?

My fav lately is I make a turkey burger and put it iver 1/2 cup of quinoa and add same salsa and avocado. Yum

I also bake chicken breast with taco seasoning and peppers and onions and then shred the chicken and make some burrito bowls with guac, corn, salsa

Do you have a recipe for the cauliflower chicken fried rice? Also, how do you make your cauliflower mash? I've tried before and it just seemed too soggy. Not sure what I did wrong.

I love salads so I like to make different kinds. (I prefer ones with nuts and cheese OR fancy dressings)
-spinach with fresh berries, dried cranberries and sunflower seeds and goat cheese
-regular mixed salad in a balsamic vinaigrette
-cesar salad (i skip croutons to make it healthier and try lightened up version of the dressings)
-mixed greens/kale salad with sunflower and pumpkin seeds and cucumbers and bell peppers

also grilled chicken with different healthy toppings or sides to mix it up like:
-grilled chicken with guacamole and black beans
-grilled chicken with an olive-tomato-basil topping
-grilled chicken with a baked sweet potato and steamed broccoli
-grilled chicken with veggie-quinoa salad
etc. etc.

Soups are very healthy:
-vegetable or chicken vegetable soup
-I make a tortilla soup which is like chicken, a can of crushed tomatoes, frozen corn, a can of black beans, a dash of lime juice and its so delicious
-minestrone
-lemon chicken soup

I also like to make meatballs from ground chicken or ground turkey and have different healthy dipping sauces for them, like tzatziki or hot sauce or a peanut butter based dipping sauce and then have vegetables of some sort on the sides. String beans, or brussels sprouts, or broccoli or sweet potatoes or something...

Eggs are always good, we do scrambled or make it into crustless quiches. Throw whatever veggies we have lying around and cheese and eggs and bake.

I keep saying that i need to be more creative with my salads. When i make them at home i just take a salad bag, add cherry tomatoes and some red onion and dressing and have it as a side salad with dinner. Not too appetizing as a lunch. I'm going to get more salad creative! Thanks for all the great ideas!!

I got the cauliflower fried rice from this recipe: Cauliflower rice . I made some modification, I add cut up chicken. I cook the chicken with the onions in the beginning before adding the cauliflower and other ingredients. I also add a little bit of sweet & sour marinade and use low sodium soy sauce. I also just use the already crumbled up pre packaged cauliflower, i get it from acme.

With the cauliflower mash I use the south beach recipe. I boil it and then but it inntje food processor. I use 1tbsp of butter and 1/4 cup of fat free half and half - it depends how thick you want it. Season with salt and pepper. You can also add fat free sour cream, sometimes i add garlic powder or sprinkle with shredded cheese.

Mix it up with stuff like grilled chicken Caesar, taco salad, even chef salad with some cold cuts, add avocados or fruit to a salad as well - apples or strawberries with goat cheese and chicken sprinkled with balsamic is good.

Another good pasta sub is spaghetti squash. This site put me on to it when someone posted buffalo chick spaghetti squash recipe. I made low carb/sodium sausage parmegiana with spaghetti squash.

This time of year, soups! You can make so many different low-cal soups both with and without meat.
I make a whole roaster chicken in my crockpot then use the stock it makes and some meat for a chicken noodle soup. I add lots of carrots, mushrooms and celery to bulk it up.
Pretty much anything can be made into a soup and kept healthy by not adding starchy fillers and extra fats. I uses lot of spices for added flavor.

I've been eating a lot of egg white frittatas for lunch. I usually make them with our leftovers.
Some recent ones:



Asparagus, cherry tomatoes and goat cheese
Steak and cheddar
Sauteed peppers onions and black beans with salsa

I also am obsessed with artichokes. Not quick per se, but you can a bunch in advance and just heat them up. I steam them with peas and lightly stuff with breadcrumbs and Italian herbs. I usually make a huge thing on lentils to go with it.

Love this thread.. those sounds yummy.

I love the south beach cheesy frittata. There is also a breakfast skillet that I got from the home chef site.. it has scramblers eggs, sweet potato, tomatoes, onions, pepper,bacon, jalapeño and goat cheese sprinkled on it. I use the honey goat cheese- DH and I love it l.

We did mason jar salads for a very long time for lunches. It's easier to get creative if you don't have to make them daily. I would grill a bunch of chicken and add lots of veggies, pecans, apples, dried cranberries,etc.

Now I usually do the ST Cuban black beans and put that over brown rice with some salsa for lunches.

We are trying to eat more plant protein and cut back on meat and dairy. Chickpea curries, lentils, black bean and sweet potato taquitos, homemade bean and quinoa veggie burgers.
