I combined two chicken recipes from LIW and came up with a very yummy, easy dish!

I was looking for chicken recipes on LIW, found two that sounded interesting, combined them, and now have one of our favorite meals!

Take chicken cutlets and marinate them in your favorite italian dressing. I use Wishbone. Cover well in bread crumbs and put in a baking pan. Take a can of diced tomatos and put on top of the cutlets. It's so yummy and simple!

ETA: Bake on 350 for 40 minutes

I always make my chicken cutlets like that. I love the flavor of the italian dressing.

Did you put any oil or anything on the pan, or just the diced tomatoes? This sounds good.

Nope, they aren't fried, just baked in the oven for about 40 min.

I use the regular, but you can really use either.

I marinate them for a few hours usually.

Ok i made this lastnight and i really think that i messed it up. I marinated the chik all day then bread crumbed them when i got home. I put them straight onto the pan then covered them with the Redpack crushed tomatoes. Then in the oven at 350 for 40 mins.

They tasted acidy (probably from the Redpack). Did i do everything in the right order - raw through to covered in tomato then in the oven???

You did it all right. I"m sorry it didn't come out good though!

I use the Delmonte diced tomatoes, not crushed tomatoes. ..maybe that makes a difference.

diced and crushed are different....i am pretty sure crushed is more like a tomato puree while diced is small cube-like tomatoes.....maybe thats where it went wrong...i have had crushed tomatoes and they are a few steps before ketchup! ( i am the lasagna queen thats the only reason i know this!)

Can we coax you to tell us how you make it, if it isn't a secret recipe?

sure - but i don't really have one recipe persay- sadly, I kinda keep adding stuff to the sauce mixture (stewed tomoates, canned or fresh diced tomoates, tomato paste and some whole tomoates i hand cut) until it tastes good ( a little more sugar, a little more salt, a little more oregano, basil ,etc) - that is how my mil taught me......

i cheat and use the no boil noodles but then only add on ingredient per layer (that is just the way we like it, you can also do a few and keep repeatin)


so it goes (from bottom to top):
[pan]
noodle layer
meat and sauce layer
noodles
cheese (ricotta, parsley and egg mixture)
noodles
either meat and/or just sauce
noodles
sauce and top with shredded mozz cheese

then oven at i think 375 for about an hr....with foil on it, then another 10-15 min w/ no foil.....if it still doesn't brown, turn on the broiler - leave the oven open slightly (don't do this if you have kids!) and it should brown in a min or two!

voila! not hard at all and its actually fun to make!
