Spinach Stuffed Shells

Box of large shells (cook, not overdone, drain, rinse with cold water to stop cooking)
1 box frozen chopped spinach (thawed and WELL drained - or will make stuffing runny if too much water in it)
1 cup fat free ricotta
1 eg white
1 close minced garlic
1 cup finely chopped onion

Saute onion and garlic. Add spinach. Cook for about 10 minutes - not over done and set aside.
Mix riccota and egg white, add spinach mixture.

Put thin layer of spagehtti sauce to bottom of baking pan, stuff shells and place in pan. Pour sauce on shells Bake at 350 for 30 minutes or until hot.

HOw can it be fat free? Pasta has fat?

Pasta does not have fat. What like .5-1g? I can usually only eat about 4 or 5 of the shells before I am stuffed, so that is no wear near the amount in a "usual" pasta dish anyway.
Also, you don't need to saute in oil, just cooking spray.

Carbs have such a bad rep and while I agree the "white carbs" have no real nutritional value, it's the PORTIONS that as so bad about them. In this dish you are getting dairy, veggies, and serve it with chicken and you are complete!Chat Icon
