Looking for a good Gazpacho recipe!

I have tomatoes that are looking to be pulverized! Does anyone have a good Gazpacho recipe they are willing to share?

Straight from my ex-mother in law in Spain --

-Scald and peel about 2 lbs. tomatoes.
-Pop them in the blender
Add:
- 2 cloves of garlic
- About 1 slice of bread - toast it, then soak in some water, then add to the blender. (some perople use carrots instead)
- Add half a peeled and de-seeded cucumber
- Pinch of salt
- half cup extra virgen olive oil
- quarter cup vinegar
- one quarter of a green bell pepper
- half cup of water, or a few ice cubes
- pinch of freshly-ground black pepper

Now blend it all really well and chill.
When serving you may add as garnish:
- chopped hard-boiled egg
- chopped onion
- chopped cucumber
- some pieces of serrano ham or prosciutto
Some people add a few ice cubes when serving too.

Thank you so much Kara! I ended up making it last night from a recipe I found in a cook book I have at home but your sounds so much better! Mine didn't turn out red (really more of an orange??) I think I used too much bread and not enough tomatoes. I will definitely try your recipe next time!

Good to know! Maybe my recipe was supposed to be orange too? I guess I just assumed it was supposed to be red since whenever I ordered it in a restaurant it has always been that way Chat Icon Maybe food coloring? Chat Icon
