i stir fry it sometimes with other veggies and whole wheat pasta in a marinade sauce (sometimes its just a dressing i let it sit in for a min of an hr before stir frying!) Posted 6/11/05 2:26 PM |

wash and peel. slice it about 1/4 " thick. press it to getout the water. then layer sauce in a pan, then the eggplant, then other vegetables like zucchini and squash, then some cheese (if wanted), more sauce, etc...stack it like lasagna. cover iwth foil and bake at 350 for about 35 minutes. serve with pasta. simple no fry eggplant parm-like recipe.
