How about spinach and artichoke dip? Don't know how to make it but I had some at a restaurant the other day and it was yummy!

cut the tops off, press down on the top to open the leaves a little, then put them in a pot of water (just enough water to go up about 1/2 way up the choke) and a little olive oil and steam them. Very Yummy!!! Chat Icon Chat Icon

Isn't there a part in them that you CAN NOT eat?

beware of that hairy part!! Usually when FMIL makes stuffed artichokes, she scoops the hair out... well we got some from a restaurant who didnt do that and I got some of those hairies in my mouth... IT WAS AWFUL!!!!!! Not a fun experience!! Chat Icon Chat Icon

This is a good one that we usually have a couple times a month. This also is nice because it is a sausage recipe, different than the usual sausage and peppers.

Artichokes with Pork Sausage, Lemon and Sage
