By Mia Bolaris-Forget

If you’re like me and most of my circle of cronies, you eagerly look forward to the summer and dining by the water or out on the deck in the backyard. But, regardless of where you dine, the warm weather seems to warrant lighter fare, including salads, chips/veggies and dip, sandwiches, and burger and hot dogs. And, all these succulent and sensations summer time tastes call for complimentary condiments.

Spice things up a bit by giving the traditionals a tantalizing twist. Mix it up by mixing in to 1 cup mayo either ¼ cup finely chopped peppers, 3 tablespoons olive puree (Kalamata, preferably), ¼ cup drained and finely chopped garlic and sun-dried tomatoes, or 3 tablespoons pesto.

These creative condiments are good for two hours outdoors and can be refrigerated in an airtight container for up to five days.
