How do i go about making a baked ziti for 50 people?

any tips advice?
how many pounds of pasta? cheese? how many cans of sauce?
how many chopped onions/garlic go into a sauce?


please help!

is that all that is being served? that make sa big difference....

I cooked food for my BIL this weekend for about 50 people, but I served penne and vodka sauce; sweedish meatballs, sausage & peppers; lemon chicken, rice, bean salad and a green salad.

There were about 50 people....

I made 3 1/2 - 4 lbs of pasta (fits in a full size sterno tray)

I used 5 cans of sauce, one whole onion, salt, pepper 2/3 of a cup of vodka; about 2 cups of cream (more or less to your liking) and 6 cloves of garlic (more on the big side) s/p and fresh chopped parsley.


if you are going to make regular baked ziti, I would say 5-6 cans of sauce puree or crushed tomatoes ,3 cans of water, salt, pepper oregano, 1 1/2 lbs of ricotta (more or less based on how cheesy you like it), some grated locatelli I don't like onion in regular sauce (only vodka sauce) but if you prefer I would say one whole onions and 6 large cloves of garlic ( or to preference) Ialso like to put smashed up meatballs and/or sausage in my baked ziti. (obviously mix the cheeses in after you mix the sauce and pasta and bake until bubbly with a crust on top.

Again...a full sterno tray takes up about 4lbs of pasta

and maybe one other dish but i am not sure. any suggestions?
this is for my dd's 1st bday.
i figured i would make the ziti to defray the cost....

IMO the vodka sauce is cheape than the ziti with the cost of ricotta cheese these days (unless you find it on sale)

The swedish meatballs are super easy if you want to use the kirkland italian meatballs (this is the ONNNNLY time I would ever use pre-made meatballs...i would never just eat these with sauce haha just had to say that ; 0 ) anyways....for the swedish meatballs they are actually pretty good. Take 1 and 1/2 32oz size jars of grape jelly, 2 jars of chilli sauce (the same size as your standard coctail sauce) and a small can of crushed pineapple in it's juice....mix up and cook over low heat until it blends really well and becomes a sauce (about 20 minutes....then take the frozen meatballs, dump in a large pot and pour the sauce over them....gently stir and simmer until heated all the way through....super easy and everyone raves over them!

Serve with white rice. 3 lbs of rice fit a full sterno...when I make white rice I use carolina rice...i make my rice like i would pasta...boil water, dump in mix until cooked with a little butter and olive oil, drain it just barely undercooked as it will steam itself in the sterno tray a little.

Chicken francese is easy too....
I usually have the chicken pounded thin by the butcher or cut a breast in half and pound thin at home....toss in flour (seasoned with salt and pepper) then egg then into the frying pan with a little butter and olive oil (i use the largest pan i have, 4 TBL of Butter and 4 rounds of olive oil (enough to just barely coat the bottom of the pan) i slightly undercook the chiken and place on a covered plate until all are cooked through....dump the chicken right back into that same pan....add white wine and the juice of 3 lemons (usually about 1 lemon per 1 1/2 lbs of chicken. I use a bout a 1/4 cup of white wine per pound of chicken....you can cut the mix with chicken broth if you like too.... let the chicken simmer in the sauce about 10 minutes or so...you can then either cut the chicken up right in the pan, or pull it out chop it and dump it back in (i cut it up into 'server size' I cut it after I cook it though so it doesn't dry out or take forever to cook all those small pieces vs a few big pieces.

Sausage and peppers:
I chop up 12 peppers 9 costco sells the 6 packs) 6 large onions (all as thin as you can chop) and mix up on the largest baking sheet i have and toss with Olive oil...back 375 until soft and blackend on the edges....I make the italian sausage on the bbq, let it rest, chop upinto bite size pieces and mix with the pre cooked peppers.....another crowd pleaser

Bean salad...I take a can of chick peas, black beans, red kidney beans and a bag of frozen choopped string beans thawed out...rinse all the beans and mix together with a large chopped red onion, garlic powder, salt, pepper and evoo...the longer this sits the better (try to make night before)

They sell the catering rolls at costco as well and they are pretty cheap....

all of the above I made for about $140 bucks
